Hearty Vegetable Beef Soup

A great winter meal!

Ingredients:

  • 2 lb. cross-cut beef shanks
  • 1 Tbsp. salt
  • 1 1/2 tsp. Worcestershire sauce
  • dash pepper
  • 2 tsp. dried parsley flakes
  • Advertisement

  • 1 medium onion, chopped
  • 1 pkg. frozen green beans, thawed
  • 1 cup chopped celery
  • 1 cup sliced carrots
  • 1 cup diced potatoes, or turnips
  • 1 (16oz.) can whole tomatoes
  • 1/3 cup barley, quick

Directions:

Combine all ingredients in crock pot. Add water to cover, about 2 cups. Cover and cook on low setting for 12-18 hours. On high setting, 5-7 hours. Before serving, remove meat and bones. Cut meat into bite-sized pieces and add to soup.

Servings: 6
Prep Time: 20 Minutes
Cooking Time: 12-18 (low) or 5-7 (high) Hours
