Bacon and Pea Soup

This is so good! It is made with frozen peas, not dried, for a real change of pace. It is quick and easy to make.

Ingredients:

  • 1 large onion, finely chopped
  • Advertisement

  • 4 slices thick bacon, chopped (I use kitchen scissors for this, makes it so much easier!)
  • 1 Tbsp. butter
  • 1 stalk celery, finely chopped
  • 8 cups chicken stock
  • 1 cup frozen green peas
  • 8 oz. orzo
  • 2 Tbsp. chopped fresh parsley
  • pepper to taste

Directions:

Put the bacon, butter, onion, and celery in a pot over medium-low heat, stirring occasionally. Cook until the bacon is browned and the veggies are tender.

Increase the heat, and add the stock, orzo, and peas. Cook until the orzo is done, stirring often.

Add the parsley and pepper, and serve.
