Cucumber Salad with Sour Cream Dressing

Feel free to switch very thinly sliced green onions for the red onions in this recipe. You can also use the dry ranch dressing mix but, since it's potent you might want to add one half teaspoon at a time to the sour cream and taste test ;-)


  • 2 medium cucumbers, peeled and thinly sliced
  • 1/4 tsp. salt
  • 1/3 cup red onions, very finely diced
  • 2 tsp. white wine vinegar
  • 3 Tbsp. sour cream
  • 1 Tbsp. prepared ranch dressing


Sprinkle the cucumbers with salt, let stand for 15 minutes.

Mix sour cream and ranch dressing.

Drain liquid from the cucumbers and toss with the onions and vinegar.

Stir in sour cream mixture just before serving.

I think (and yes I do have thoughts) that if you use English hothouse cucumbers. You don't have to peel (or seed) them.

I make this a lot but I cut the cucumbers and onions the day before and add twice the salt. Let is sit in the fridge over night. I wash and drain the cucumbers and onions. I make a large batch since we like them.


I only add the dressing just before serving and pour off the liquid before adding the dressing. I only serve up what we are going to eat that meal the rest is in the fridge until the next meal. Then I will add the dressing for that meal.
