Salmon Loaf Delight

This is a Salmon Loaf with sage in it. Sage is one of my favorite herbs due to all the things it is good for. Anytime you cook and see sage in the ingredients, you can be sure it is a great food and it is great food for you.

For those of you who are interested in it, here is a link describing the benefits of sage.

  • 1 15 oz. can salmon, undrained
  • 1 cup fresh bread crumbs *
  • 2 beaten eggs
  • 1/2 cup diced celery
  • 1/2 cup evaporated or regular milk
  • 2 Tbsp melted butter
  • 1 Tbsp Minced Parsley
  • 2 tsp dried onion
  • 1/2 tsp salt
  • 1/2 tsp. crumbled sage
  • 1/2 tsp. lemon juice
  • Dash of freshly ground pepper

*I make my own bread crumbs by tearing up enough slices of bread to fill one cup and then spreading those out on a cookie sheet and leaving out or someplace safe overnight. They will be crisp the next morning.

  1. Preheat oven to 350 degrees.

  2. Butter a loaf pan.

  3. Flake undtrained salmon into a medium bowl.

  4. Add bread crumbs, eggs, celery, milk, butter, parsley, onion, salt, sage, lemon juice and pepper.

  5. Stir until well combined.

  6. Pack firmly into loaf pan.

  7. Bake for 40 minutes.

Great when served with a veggie and a salad of your choice.
