This is a great casserole that the whole family will love.

Ingredients:

  • 1-1 1/2 lbs. hamburger
  • 1 pkg. taco seasoning
  • 1 (8 inch size) pkg. flour tortillas
  • Ad

  • 1 can pinto or refried beans
  • 2 cup shredded cheddar cheese
  • 1 can enchilada sauce
  • 1 (16 oz.) carton sour cream
  • 1 jar salsa

Directions:

Cook hamburger, drain and rinse and return to pan. Mix taco seasoning package together and simmer in ground beef. In each tortilla shell, add 2 spoons of meat mixture. 2 spoons of beans, 1 spoon of enchilada sauce and 1 spoon of cheddar cheese.

Roll each tortilla up and arrange in 7x11 inch glass dish. Top with remaining enchilada sauce, meat mixture, cheddar cheese and olives. Microwave until cheese melts. Serve with salsa and sour cream.

Servings: 8
Prep Time: 20 Minutes
Cooking Time: varies - until heated through and cheese is melted. Minutes

One of my favorites! Love enchilada sauce!

Ingredients:

  • 2 lbs. hamburger
  • 1 (15 oz.) can tomato sauce
  • 1 can cream of mushroom soup
  • Ad

  • 1 (10 oz.) can mild enchilada sauce
  • 12 flour tortillas
  • 8 oz. shredded cheddar cheese
  • 8 oz. shredded mozzarella cheese

Directions:

Brown and drain hamburger. Add tomato sauce, cream of mushroom soup and enchilada sauce, and heat thoroughly. Tear tortillas into small pieces. In 9x13 inch pan, layer 1/2 of the tortillas, hamburger mixture and the grated cheese. Repeat layers. Bake at 350 degrees F for 30 minutes.

Servings: 6-8
Prep Time: 20 Minutes
Cooking Time: 30 Minutes

Easy and Mild and good left over the next day.

Ingredients:

Directions:

Brown, crumble and drain the ground beef and set aside.

Put the red sauce and tomato sauce in a pot and heat. Stir to mix.

Put a little butter in a skillet and warm several corn tortillas, both sides.

Drip each tortilla in the warm sauce and layer in a casserole dish, then meat, onions, beans (I use bean and bacon soup, no water added or kidney beans) cheese, olives, chilies, another layer of sauce dipped tortillas. Layer meat, cheese, etc, ending with top layer of tortillas, spread some warm sauce on top then, add cheese.

Bake at 350 degrees F. for 30-40 minutes or until heated and cheese is melted.

Optional: crush corn chips and sprinkle on each serving.

Servings: 4-6
Time:45 Minutes Preparation Time
30-40 Minutes Cooking Time

Ingredients

  • 2 lb. ground beef
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 tsp. salt
  • pepper and chili powder, to taste
  • 1 large bag Tostitos, or other tortilla chips
  • 2 lb. cheddar cheese, shredded
  • 1 can enchilada sauce

Directions

Brown ground beef in skillet, stirring until crumbly. Pour off drippings. Stir in soups and seasonings, mixing well. Layer chips, ground beef mixture and cheese alternately in large baking dish until all ingredients are used, ending with chips. Top with enchilada sauce. Bake at 400 degrees F for 15 minutes or until bubbly.

Preheat the oven to 400 degrees F. Brown the meat and onions together and drain. Mix the salsa, black beans, dressing and taco seasoning with the meat. Arrange 3 flour tortillas, single layer, on the bottom of a 9x13 inch baking dish.

Ingredients

  • 1 1/2 lb. hamburger
  • 1 can cream soup (celery, mushroom or chicken)
  • 2 cans mild enchilada sauce
  • 1 med. onion, chopped
  • 1/4 tsp. garlic salt
  • salt and pepper, to taste
  • 12 corn tortillas
  • 3/4 lb. longhorn cheese, shredded

Directions

Brown hamburger and onions together. Drain off fat. Add garlic salt, pepper, salt, soup and both cans of enchilada sauce. Tear tortillas into quarters and line bottom of 9x13 inch pan with half tortillas. Spoon half of meat mixture over tortillas. Spoon half of the cheese over mixture. Place another layer of tortillas then the rest of the meat sauce and layer of cheese. Bake for 30 minutes (or until bubbly) at 350 degrees F.

  • 1 chopped onion
  • 1 lb. hamburger, browned
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 small can chopped green chilies, drained
  • 1 can enchilada sauce
  • 8-10 corn tortillas
  • 1 c. milk
  • salt and pepper
  • grated cheese

Directions

Cut tortillas in quarters. Add all ingredients together except cheese and tortillas. In casserole place layer of tortillas; then meat mixture; then cheese. Repeat. Bake 30-40 minutes at 350 degrees F.

Enchilada Casserole

I make what I call a Mexican Casserole that is similar to this but takes a little less time. I brown a pound of ground beef; when meat is almost totally cooked, I add a cut up large onion and saute until meat is completed done. I drain this and place 1/2 into a casserole. I then add a layer of corn chips or nacho chips (this is a way to use the stale ones up) and a layer of sharp cheddar that has been grated. I then layer the remaining beef, chips, and cheese. I mix one can of mild enchilada sauce with one can of water, stir together and pour over casserole. I bake at 350 degrees F for about one hour (covered with foil). I remove foil, sprinkle another layer of cheddar on top, and bake until cheese is melted and a little browned. Serve with a salad - makes a good meal! (02/14/2008)

Ingredients

  • 1 lb. ground beef
  • 1 can tomato sauce (10oz.)
  • 1 sm. chopped onion
  • 1 can chili, with or without beans
  • garlic, to taste
  • Frito chips
  • shredded sharp cheddar cheese

Directions

Preheat oven to 350 degrees F. Saute' meat, onion and garlic. Add sauce and chili; cook on low for 5 minutes. In 2 qt. casserole dish, pour Fritos to layer 2 inches. Pour meat on top and coat with crushed Fritos and grated cheese. Bake 20 minutes.

Ingredients

  • 12 flour tortillas
  • 2 lbs. ground beef, browned with chopped onion to taste
  • 1 lb. grated colby of Cheddar cheese
  • 1 pint sour cream
  • 1 can cream of mushroom soup
  • 1 can diced mild green chilies
  • sliced ripe olives, to taste

Directions

Roll hamburger and grated cheese into tortillas, reserving about 1/2 cup of the cheese. Place in greased 9x13 inch pan. Mix soup, sour cream, chilies. Spread mixture over stuffed tortillas. Sprinkle with remaining cheese and top with olives. Cover with foil and bake 1 hour at 325 degrees F.

with homemade enchilada sauce but I noticed
my husband does not care for them, everyone else

Enchilada Casserole

I make enchiladas very similar to this recipe. I take a can of refried beans and smear a thin layer of beans on the enchiladas before adding the ground beef(I also add some salsa to the hamburger while cooking), I've found they stay together better this way. After adding the hamburger mixture, I roll them up (like burritos) and pour a can of Enchilada sauce over them,then sprinkle with some Cheddar cheese. I've also made these with some leftover diced chicken pieces....they were a major hit also. I made them last weekend and the family said this recipe was a "keeper". I bake them at 350 degrees F til the cheese melts (if the meat mixture is hot, longer if I've made the meat mixture earlier). I put a dollop of sour cream on them when I serve them. VERY EASY, but looks like you've worked all day :) (04/13/2006)

Enchilada Casserole

I always end up making enchilada casseroles rather than enchiladas because no matter what I do (dipping the corn tortillas in oil or enchilada sauce), they still crack and don't stay rolled. (04/19/2006)
