I have made this braised short ribs a couple times now, it is always a hit in our house. However, it is a time consuming but definitely delicious and the meat is so tender! Pairs great with french bread, mashed potatoes, rice/quinoa, or roasted vegetables, etc.

Prep Time: 10 minutes

Cook Time: 3 to 3 1/2 hours

Total Time: 3 to 3 1/2 hours

Yield: 4-5 people

Braised Short Ribs with veggies and herbs
 
Braised Short Ribs
 

Ingredients:

  • 3.5 lb boneless short ribs
  • 3 medium onions, separated into rings
  • 3 stalks celery
  • 5-6 medium rainbow carrots
  • 1.5 bulb garlic
  • 1 750 ml dry red wine
  • 4 cups beef stock
  • 1 Tbsp tomato paste
  • dash salt and pepper
  • 3 Tbsp vegetable oil
  • 3 Tbsp all purpose flour
  • rosemary
  • thyme
  • oregano

Steps:

  1. Chop onions, celery and carrots.

  3. Season short ribs with dash of salt and pepper.

  5. Over medium high heat in a large dutch oven, add oil and brown short ribs. Then set meat aside.

  7. In the same pot over medium high, sauté chopped vegetables.

  9. Add tomato paste and flour. Stir until evenly combined.

  11. Pour in your choice of red wine. Bring mixture to a boil then lower heat and simmer allowing wine to reduce by half for about 20-25 minutes.

  13. Add beef stock and herbs, and garlic bulbs. Bring to a boil, turn off and prep to put in the oven.
  14. Braised Short Ribs with fresh herbs
     
  15. Pre-heat oven to 350 F. Cover and cook for about 2 - 2 1/2 hours depending on your oven to when the meat is tender.

Tender, falling-off-the bone ribs is what you will get when you make this. I clipped this recipe a while ago: a Christmas gift of red wine and a sale on short ribs resulted in a great dinner tonight.

Heat shortening in Dutch oven. Brown ribs. Combine ingredients. Pour sauce over meat. Cover and simmer 2 hours, turning occasionally.

Refrigerate covered. Next day, remove solid fat on the surface.
