I like this simply because I think it's kind of unique. Very tasty.

  • 4 medium sweet onions
  • 1 cup water
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 9 oz. potato chips, crushed
  • 1 cup grated cheddar cheese
  • paprika

Peel onions and slice thinly. Simmer in water until almost tender for 5-8 minutes, and drain. Combine mushroom soup with milk. In greased 2 quart casserole dish, arrange ingredients in order; onions, potato chips, cheese, mushroom soup, and sprinkle with paprika. Bake at 350 degrees F for 30 minutes.

Servings: 4-6
Prep Time: 15-20 Minutes
Cooking Time: 30 Minutes

My family loves onions, especially Vidalia onions, and this casserole was invented as a way to use the last four onions prior to shopping for more.

Layer the above three ingredients. Repeat layers again. Combine two cans cream of chicken soup with 1/2 cup milk. Pour over layers and top with crushed chips. Bake at 350 degrees F for one hour.

Very different recipe, but very good!

  • 3 cup large sweet onions, sliced
  • 1 1/8 cups salted peanuts, chopped
  • 1 can cream of celery soup
  • 1/4 cup milk
  • 1/3 cup bread crumbs, buttered

Cook the sliced onions in salted water 10 minutes. Drain thoroughly and place in buttered casserole. Top with chopped peanuts, then the crumbs on top and bake at 350 degrees F until mixture is hot and the crumbs browned; about 25-30 minutes.

Melt margarine in skillet; saute onions until tender but not brown. Season to taste with salt and pepper. Remove from heat.

Stir in cooked rice, garlic powder, and sour cream. Spread 1/2 the mixture into large, shallow greased baking dish.
