I like spooning this dish over basmati rice or orzo.

Ingredients:

Heat the oil in a wok or large skillet over medium-high heat. Add onion and stir fry until translucent, about 5 minutes. Add tomatoes, curry, soy sauce, ginger, garlic, turmeric and chili powder and stir 4 minutes.

Stir in the potatoes, broth and wine, cover, and simmer 10 minutes.

Add chicken, cover and cook until potatoes are tender and chicken is cooked, about 10 minutes.

Season with salt and pepper and serve.

This is a really delicious and easy to make chicken curry.

Ingredients:

  • 1 pkg chicken broth
  • 2 chicken breasts (boneless and skinless), cut into large strips
  • 4 potatoes
  • 4 garlic cloves
  • 2 carrots
  • 2 tsp curry powder
  • 1/2 tsp salt
  • Dash of sugar
  • 3 Tbsp lemon grass
  • 3 Tbsp olive oil
  • 1 cup water

Steps:

  1. Wash and prep all your ingredients. Wash and cut chicken breast into 2" inch pieces. Dice potatoes and carrots. Slice garlic.
  2. In a large pot, add olive oil, garlic, lemon grass and stir for about 5 minutes.
  3. Ad

  4. Add chicken and curry powder. Stir in salt and dash of sugar. Add your chicken broth plus water on medium heat. Cover the lid for 15 minutes to bring to a boil.
  5. Add your diced carrots and potatoes. Cook on high heat for 5 minutes.
  6. Turn off the stove and allow the pot to rest for 10 minutes before serving.
  7. Optional: It is best to serve with french bread.

Ingredients

  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 can (14 1/2 ounces) stewed tomatoes, cut up
  • 1 large green pepper, cut into 1-inch pieces
  • 1 large onion, sliced
  • 1/2 cup mango chutney
  • 2 Tbsp. cornstarch
  • 1 1/2 tsp. curry powder
  • 1/4 cup water

Directions

In a 3-qt. slow cooker, combine the chicken, tomatoes, green pepper, onion and chutney.

In a small bowl, combine the cornstarch, curry powder and water until smooth; stir into chicken mixture.

Cover and cook on low for 4 hours or until chicken juices run clear.

Ingredients

  • 2 1/2-3 lb. chicken, cut into serving pieces
  • 1/4 lb. onions, sliced
  • 1 tsp. ginger or ginger root, chopped
  • 1/4 tsp. chopped garlic
  • 5 cardamom seeds
  • 2 bay leaves
  • 1/4 lb. butter or margarine
  • 1 tsp. salt
  • 1 carton plain yogurt, opt.
  • 1 Tbsp. sugar, opt.

Directions

Mix all ingredients together. Cook together in covered pot over low heat for 30 minutes or until chicken is tender. If additional liquid is desired, add a little water or yogurt.

Curry you can have with rice or roti.

Ingredients:

  • 1 whole chicken or pieces cut, skinned and rinse
  • 1 tin coconut milk
  • 2 Tbsp. sunflower oil
  • 1 Tbsp. lemon juice
  • 2 Tbsp. ginger and garlic crushed
  • 4 green chillies
  • 1 large tomato chopped
  • 2 medium onion chopped
  • 2 sticks cinnamon
  • 2 pods aniseed
  • 3 cloves
  • 2 pods cardamom
  • 3 stems curry leave
  • 1/2 bunch coriander
  • 1/2 tsp. garmasala
  • 1/2 tsp. jeera or cumin powder
  • 1/2 tsp. curry powder
  • 1/2 tsp. turmeric powder
  • salt to taste

Directions:

Fry onion in oil till it browns a little, then add ginger and garlic and saute for few seconds. Add the whole spices and keep stirring not to burn. Add the curry powder, turmeric powder and tomato and cook a little.

Add the chicken and lemon juice and cook for a while and add the rest of the spices. Add the coconut milk and cook till the gravy gets thick. Garnish with curry leaves and coriander leaves.

Ingredients

  • 2 whole medium chicken breasts (skinned and boned)
  • 1 Tbsp. curry powder
  • 1/4 tsp. thyme leaves
  • 1/8 tsp. pepper
  • 1 Tbsp. salad oil
  • 1 carrot (thinly sliced)
  • 1 onion (sliced)
  • 1 cube chicken bouillon
  • 1 green pepper (cut in chunks)

Directions

Cut chicken in bite size chunks. Toss chicken with curry powder, thyme and pepper. In skillet (med. heat) add salad oil; cook chicken until lightly browned, stirring frequently for 5 minutes. Add carrot, onion, bouillon and a tsp. of water. Cook over high heat to boiling. Reduce heat to low, cover and simmer 15 minutes. Add green pepper and cook 10 minutes more. Serves 4
