Very good leftovers to heat in the microwave. This could be started earlier in the day, and refrigerated. You could even bake the crust ahead, then just pour in the ingredients and bake as directed.

I am making hash brown casserole for 120 people. Is there anyway I could put it in a roaster to cook it or would it turn out mushy from the steam?

It will turn out mushy! I tried that once thinking I would save time and had to throw the whole thing out. Unfortunately, hash browns need to be fried. That's what makes them brown.

Preheat oven to 375 degrees F. In large bowl, combine all ingredients. Spread mixture in greased 9x13 inch pan. Bake 50-60 minutes or until lightly browned and bubbly.
In a large bowl, mix the soup, sour cream, onion, chives, and 1/4 cup of the melted butter. Fold in the hash browns and shredded cheese. Crush the corn flakes in a zip lock bag.
