Baked Chicken Recipes

For the best slow cooked baked chicken, use my favorite way to cook chicken. It's a family favorite!

Ingredients:

  • 1 whole chicken
  • 2 lemons
  • lemon pepper seasoning
  • vegetable oil spray

We love lemon pepper chicken but you can use any seasonings you like.

Steps:

  1. You use a empty 35 oz large aluminum coffee can. Wash inside and out remove any plastic that might cover the can. Make sure to dry the inside of can well.
  2. Have chicken ready. Rinse all cavities and pat dry. We cut two lemons in half and stuff into chicken. Then sprinkle lemon pepper on entire chicken top to bottom and all around wings, making sure to include all crevasses.
  3. Spray inside of coffee can with vegtable spray. Stuff chicken in can. Seal off end of can with aluminum foil. Place in a pan with sides (example: lasagna pan).
  4. Bake at 250 degrees F for two hours (may be longer for a large bird).
  5. When chicken is done cooking, it's the most melt in your mouth tender chicken you'll ever taste! Bon appetit!

Coat chicken with flour. Arrange chicken in single layer, skin-side-down, in melted butter or margarine in 9x13 inch baking dish. Bake covered, at 425 degrees F for 30 minutes.

One hour prior to serving time, heat oven to 425 degrees F. Combine coating ingredients and use to coat chicken pieces on all sides. Use oven to melt butter in large shallow pan.

Does anyone have a delicious recipe for baked chicken? I am trying to force myself to eat baked chicken for health reasons but I can't seem to find the right seasoning to give it a good flavor. I use salt, pepper, and garlic powder on chicken parts, cover with foil and bake for 30-40 mins. Do you have a better way of preparing it?

This one came from the American Heart Assoc. cookbook...husband said "it's a keeper!"

1 cup fat-free milk
1 cup crushed cornflake crumbs

1 tsp. crushed dried rosemary
1/2 tsp. pepper
4 boneless, skinless chicken breasts(trim excess fat)

Preheat oven 400* line a baking dish with foil and lightly spray with vegetable oil (I use spray olive oil)
Pour milk in a bowl
In another bowl combine the rest of the ingredients
(it said to rinse chicken and pat dry with paper towels, but I omit that part)
Dip chicken into milk and then into crumb mixture.
Arrange chicken into your baking pan so that the pieces don't touch.

Bake 30 minutes

YUMMY!!!

Roll chicken breasts in egg followed by crushed French Fried Onions (located in the canned vegetable section of the grocery.) Cook at 400 degrees for 20-25 minutes. Adds flavor without calories.
