I've been getting a bit tired of spaghetti squash in the usual form I prepare it; with spaghetti sauce or as a layered lasagna. I tried turning them into crisp fritters and they were delightful. You can add whatever bits you like in them, I went with onions, bacon and Parmesan cheese.

I'm sure many of you have had sweet potato pie. This pie is very similar but uses purple sweet potatoes. Baking the sweet potatoes in the oven (in lieu of boiling them) gives this a beautiful creamy consistency and not at all watered down. Baking them also retains their beautiful purple colour. Purple sweet potatoes can be found in grocery stores labeled as Okinawan, Hawaiian, or purple sweet potatoes. They are packed full of potassium, B6, vitamin C, and fiber.

This recipe was posted in the New York Times as an April Fool's joke, but I tried it out, with my own adjustments, and it was one of the most spectacularly juicy chickens I'd ever had. No, you can't taste the watermelon, and yes, it is so worth the time to do this. Summertime makes watermelons abundant and cheap, so please give this a try. I like to make the filling with 1/2 sugar free vanilla pudding mixed with 1/2 whipped cream which is unsweetened. Amazing Greens SmoothieOne of my favourite smoothies from Jamba Juice used to be Amazing Greens, consisting of lemonade, peach juice, peaches, kale, bananas, and pumpkin seeds. Two things really put me off from buying it again. One was that a large serving has 92 grams of sugar, coming from all the added sugars in the lemon and peach juices. The other is that it cost $9 a cup. Crazy! Here is how I make it at home, just as large (although I split it in two), with no refined sugar, a total of 24 grams of sugar, at a tiny fraction of the price.

Applesauce Honey Oatmeal CookiesThese cookies came about as I've been trying to cut down on refined sugar. I used the sweetness from pure applesauce and honey instead of using any white or brown sugars. I did use a small amount of dark chocolate chips, but upped the raisins. They turned out really good, soft and comforting. One of these cookies every once in a while does not make me feel bad at all. :)
